Ingredients

  • 1.5 tbsp Dan-O’s Original Seasoning
  • 1/2 tbsp dried thyme
  • 16 oz raw pumpkin, peeled and thinly sliced
  • 2-3 medium potatoes, peeled and thinly sliced
  • 2 cups grated or shredded cheese (Gruyère or Cheddar)
  • 1 cup half and half
  • 1 cup breadcrumbs

Preparation Instructions

  1. Preheat the oven to 375°F. Grease a 1-quart casserole dish.
  2. Slice the potatoes and pumpkin into 1/8-inch thick slices.
  3. Place 1/2 of the pumpkin into a layer in the dish, sprinkle with thyme and 1/4 of the cheese.
  4. Add a layer of potato slices, sprinkle with Dan-O's Original and another 1/4 of the cheese. Repeat the pumpkin and potato layers one more time using up the cheese.
  5. In a small bowl, combine the breadcrumbs and 1/2 tbsp Dan-O's Original.
  6. Pour the half and half evenly over the layers in the dish and sprinkle with the breadcrumbs
  7. Cover the dish with foil and bake for 45 minutes, remove foil and bake another 15-20 minutes until golden brown on top. Let sit 10-15 minutes before serving.
