Mini Beef Tacos

These crispy mini beef tacos are one of those easy-but-feels-like-a-party recipes: crispy street-taco shells, flavor-packed taco meat, melty cheese, and a simple sauce that takes it over the top. You can dress them up a million ways, but keeping it classic with onion + cilantro + Dan-O’s Dips Mexi-Ranch is hard to beat.

Ingredients

  • 1 packet Dan-O’s Dips Mexi Ranch
  • 4 tbsp Dan-O’s Tac-O Seasoning
  • 1 tbsp Dan-O’s Chili Lime
  • 1 lb ground meat (beef, turkey, or chicken)
  • ¾ cup water
  • 24 mini corn tortillas
  • 2–3 tbsp oil (for crisping)
  • 1 tsp sea salt
  • 1 (16 oz) container sour cream
  • ½ lb Monterey Jack cheese, freshly shredded (about 2 cups)
  • 1 small onion, diced
  • 1 bunch cilantro, chopped

Preparation Instructions

  1. Cook and thicken the taco meat: Cook the ground beef and sprinkle in Dan-O's Tac-O Seasoning. Then add water. Let it simmer so it rehydrates and thickens up.
  2. Prep the baking sheet: Preheat the oven to 400°F. Add the oil to a baking sheet and spread the oil edge-to-edge across the whole sheet. Add a pinch of sea salt to give just a light dusting over the oiled sheet.
  3. Lay out the tortillas: Place the mini tortillas on the prepared baking sheet. Lightly press and swirl each tortilla in the oil so the bottoms are evenly coated.
  4. Add cheese & meat: Sprinkle Monterey Jack evenly over each tortilla (a little on each one). Spoon your taco meat onto each tortilla, portioning it out evenly.
  5. Bake, fold, and crisp: Put the tray into the 400°F oven. After about 5 minutes, pull the tray out and fold each tortilla over into a taco shape, gently pressing it down. Put back in the oven for another 5 minutes to help it crisp. Then use a small spatula to flip the tacos so the other side gets crispy. Bake about 5 more minutes, or until crisped to your liking.
  6. Make the Mexi Ranch sauce: Add the sour cream and Dan-O’s Dips Mexi Ranch to a bowl. Mix until smooth.
  7. Build and serve: Open up a crispy mini taco. Add onion, cilantro, and a scoop of Mexi Ranch sauce. Serve immediately, and Yum Yum Get Ya Sum!
