Lambchops with Chimichurri

These lamb chops are coated with Dan-O’s Original Seasoning for savory, herby flavor, then hit with Dan-O’s SPG Tri-O for that gold-standard salt, pepper, and garlic finish. You can also switch it up by pairing Dan-O’s Original Seasoning with any of your favorite Dan-O’s Premium Blends to make this recipe your own. They’re topped with a bold garlic jalapeño sauce that brings heat, brightness, and big-time flavor. Serve them sliced with the sauce spooned over the top, or pair them with rice, roasted potatoes, grilled vegetables, or a fresh salad. They’re juicy, saucy, and Dan-Good.

Ingredients

  • 2 tbsp Dan-O’s Original Seasoning, divided
  • 2 tbsp Dan-O’s SPG Tri-O (Salt, Pepper, Garlic), divided
  • 2 racks lamb chops
  • 1 tbsp cooking oil, for binder
  • 3 tbsp ghee butter
  • 10–12 large garlic cloves, roughly chopped
  • 3 jalapeños, roughly chopped
  • 1 small handful cilantro
  • 1 lime, juiced
  • ¼ cup extra virgin olive oil

Preparation Instructions

  1. Season the Lamb Chops: Coat the lamb chops with cooking oil, then sprinkle with Dan-O’s Original Seasoning. Add another light coating of cooking oil, then sprinkle with Dan-O’s SPG Tri-O. Pat the seasoning into all sides of the lamb chops so they are evenly coated.
  2. Sear the Lamb Chops: Preheat the oven to 400°F. Heat a large oven-safe pan until hot, then add the ghee butter. Once the pan is hot and smoking, add the lamb chops and sear for 1 minute. Flip the lamb chops.
  3. Roast the Lamb Chops: Turn off the stovetop heat and transfer the pan to the 400°F oven. Roast for 20 minutes, or until the lamb chops reach your desired doneness. Remove from the oven and let rest for 10 minutes.
  4. Make the Garlic Jalapeño Sauce: Add the chopped garlic to a mortar and pestle or molcajete. Add about half of the jalapeños, the cilantro, lime juice, extra virgin olive oil, the remaining Dan-O’s SPG Tri-O, and the remaining Dan-O’s Original Seasoning. Mash until the mixture starts to break down, then add the remaining jalapeños and keep mashing until combined. Pulse 6–7 times with an immersion blender or small blender, until the sauce reaches a thick, spoonable consistency.
  5. Serve the Lamb Chops: Slice the rested lamb chops, then spoon the garlic jalapeño sauce over the top. Serve and Yum Yum Get Ya Sum!
