Sweet roasted onions are hollowed out and filled with a creamy blend of goat cheese, blue cheese, herbs, and sautéed onion, then topped with parmesan and baked until perfectly melty. The result is a tender, flavorful onion “bowl” filled with cheesy goodness that’s perfect for holidays, dinner parties, or anytime you want a side dish that steals the spotlight.

Ingredients

  • 1 tsp Dan-O’s SPG Tri-O (Salt, Pepper, Garlic) Seasoning
  • 2-4 large Vidalia or other sweet onions
  • 1/2 cup crumbled goat cheese
  • 1/2 cup crumbled blue cheese
  • 1 tbsp minced fresh thyme
  • 1 cup vegetable broth
  • 1/4 cup grated Parmesan cheese

Preparation Instructions

  1. Preheat your oven to 450°F. Turn onions into edible bowls: Slice about 1/3 inch off the top of each onion and remove the tough outer layers. Trim about 1/4 inch off the bottom so they can sit flat without tipping over. Using a spoon, cookie scoop, or melon baller, carefully scoop out the center of each onion to create a hollow space for stuffing. Don’t toss those onion insides—roughly chop them and set them aside. They’re going right back into the filling later.
  2. First bake: Place the hollowed onions in a deep baking dish. Pour broth into the bottom of the dish to help keep everything moist and flavorful. Bake uncovered on the middle rack for 25 minutes until the onions start to soften.
  3. Drain and reset: Remove the onions from the dish, drain the liquid from the pan, and place the onions back in the baking dish.
  4. Reduce the oven temperature to 400°F.
  5. Make the cheesy filling: In a skillet over medium heat, cook the reserved chopped onion with Dan-O’s SPG Trio for about 5–6 minutes, stirring often until softened and fragrant. Remove from heat and fold in the goat cheese, blue cheese, and thyme until creamy and well combined.
  6. Stuff those onions: Spoon the cheesy mixture into each cooked onion until they’re nice and full.
  7. Sprinkle Parmesan cheese over the tops for that golden, bubbly finish.
  8. Bake again: Cover the dish loosely with aluminum foil and bake for about 20 minutes.
  9. Remove the foil and bake for another 5 minutes, or until the cheese is melted.
  10. Let cool slightly, serve, and Yum Yum Get Ya Sum!®
