Cajun Queso Dip

Ingredients

  • 1 bottle Dan-O’s Cajun Seasoning (use less to make it less spicy)
  • 1 lb ground pork
  • 1 lb chorizo
  • 1 bell pepper (any color), chopped
  • 1 onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Colby cheese
  • 1 cup shredded pepper jack cheese
  • 1 block Velveeta cheese, cubed

Preparation Instructions

  1. Cook the Meats: In a large skillet, combine the ground pork and chorizo. Cook over medium heat until both meats are browned and fully cooked. Drain excess grease and set the meat mixture aside.
  2. Sauté Vegetables: In the same skillet, add chopped bell pepper and onion. Sauté until the vegetables are tender.
  3. Prepare the Cheese: While the vegetables are cooking, shred the cheddar, Colby, and pepper jack cheeses. Set shredded cheeses aside.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked meats, sautéed vegetables, Dan-O's Cajun, shredded cheeses, and cubed Velveeta cheese. Mix thoroughly.
  5. Cook the Queso: Preheat your smoker to 300°F. Transfer the cheese and meat mixture to a suitable smoker-safe dish. Smoke for 1.5 to 2 hours, or until the cheese is melted and bubbly.
  6. Once cooked, remove from the smoker and serve warm with tortilla chips or your favorite dippers.
