Ingredients

  • 1 tbsp Dan-O’s Preem-O
  • 1 tbsp Dan-O's Cajun
  • ⅛ tsp kosher salt
  • 2 large chicken breasts
  • 1 tbsp avocado oil
  • 1 medium onion, sliced
  • 1 green bell pepper
  • 1 pound rigatoni pasta
  • 2 tbsp salt (for the pasta water)
  • 15 oz Carbone Roasted Garlic Alfredo sauce
  • 4 to 6 quarts of water

Preparation Instructions

  1. Prepare the Chicken: Filet the chicken breasts in half to create four thinner pieces. Cover the chicken with plastic wrap and gently pound them to an even thickness. Generously sprinkle Dan-O’s Cajun seasoning on both sides of the chicken, ensuring it is well-coated.
  2. Cook the Vegetables: In a large skillet over high heat, add a splash of water, sliced onions, and bell peppers. Sprinkle in a pinch of kosher salt and the Dan-O’s Preem-O. Let the vegetables cook until softened, stirring occasionally. Remove from heat and set aside.
  3. Boil the Pasta: In a large pot, bring water to a boil. Add salt and then the rigatoni pasta. Cook according to package instructions until al dente, then drain.
  4. Cook the Chicken: In the same skillet, heat avocado oil over medium-high heat. Add the seasoned chicken and cook for about 3 minutes on each side, or until fully cooked and golden brown. The chicken should have a nice sear.
  5. Combine Ingredients: Once the chicken is cooked, remove it from the skillet and slice it into thin strips. Add the cooked pasta, the alfredo sauce to the skillet. Stir to combine and heat through. Add the cooked onions and peppers back into the skillet, mixing well.
