“Hey! You got honey in my mustard!” “Hey! You got mustard in my honey!”

For as long as man has existed, Honey has been a feature in many diets. But Mustard? That’s a little different. Mustard has been a condiment for thousands of years; some of the earliest Mustard recipes date back to 42 A.D. in Roman writings. Mustard didn’t boom in popularity until the Romans started exporting the seeds to France. The seeds proved popular, and mustard became a common item for food peddlers as early as the 13th century. By the time the 1600s rolled around, Mustard had legal protection for its many recipes and makers.  Some french makers would substitute Verjuice, a green grape juice, for vinegar in their recipes helping produce a milder taste that we now call Dijon Mustard. Honey was later added to gentle the mustard out further, thus creating honey mustard in its most popular form.

Around the hive and back again

Here’s an interesting way to spice up your Honey Mustard: use different varieties of honey. You see, Honey is directly affected by the nectar bees gather. The most popular honey in America is clover, that sweet and mild flavor with a touch of cinnamon. However, you can experiment with different kinds of honey to get subtle new flavor profiles going on in your Honey Mustard. Try alfalfa honey, it’s lighter, more herbal and sweet, and delicate overall. You could also try Orange blossom or Baker’s special! Get creative and experiment with different kinds of honey to get the honey mustard you enjoy most
