Smoky Bourbon BBQ Chicken Pizza

We’re making pizza night Dan-Good with a crispy cast iron crust and plenty of melty cheese! Pappy Dan Sprinkles Smoky Barrel BBQ brings smoky flavor to the chicken and bacon, while barbecue sauce, banana peppers, and red onion add sweetness and tang. Keep that bacon from getting too crispy during its first bake, it’ll cook again on top of the pizza!

Ingredients

  • 2½ tbsp Pappy Dan Sprinkles Smoky Barrel BBQ, divided
  • 1 tbsp Dan-O’s Outlaw Butter Dust
  • 1 tbsp Dan-O’s Cheesoning®
  • 1 prepared pizza dough ball
  • 1 large chicken breast
  • 3 strips bacon
  • 3 tbsp all-purpose flour, for dusting
  • ⅓ cup olive oil
  • 2 tbsp barbecue sauce
  • 2 banana peppers, sliced
  • ¼ medium red onion, thinly sliced
  • 12 oz mozzarella cheese, shredded

Preparation Instructions

  1. Prep the Dough: Let the store-bought pizza dough come to room temperature and proof according to the package instructions, allowing about 2 hours.
  2. Season the Chicken and Bacon: Preheat the oven to 400°F. Place the chicken and bacon on a baking pan. Season generously both sides with 2 tbsp Pappy Dan Sprinkles Smoky Barrel BBQ, gently pressing the seasoning onto the chicken.
  3. Cook the Chicken and Bacon: Bake for about 20 minutes. Remove the bacon before it reaches your preferred crispness, since it will cook again on the pizza. Continue baking the chicken for another 7–8 minutes, or until cooked through. Keep the oven at 400°F.
  4. Stretch the Dough: Sprinkle the flour onto your work surface. Press the dough into the flour, flip it, and gently work it until it no longer sticks to your hands. Stretch it to fit a 14-inch cast iron skillet.
  5. Prepare the Pan: Pour in the olive oil and spread it across the bottom of the skillet. Sprinkle in Dan-O’s Outlaw Butter Dust, Dan-O’s Cheesoning®, and ¼ tbsp Pappy Dan Sprinkles Smoky Barrel BBQ. Place the stretched dough in the skillet.
  6. Prepare the Toppings: Thinly slice the cooked chicken, then cut the slices into small chunks. Dice the bacon.
  7. Build the Pizza: Spread the barbecue sauce evenly over the dough. Distribute the chicken, banana peppers, and red onion over the sauce. Sprinkle with the remaining Pappy Dan Sprinkles Smoky Barrel BBQ, cover with mozzarella, and finish with the bacon on top.
  8. Start the Crust: Turn the burner to high and heat the assembled pizza for about 3 minutes, until the oil begins bubbling around the edges.
  9. Bake the Pizza: Transfer the skillet to the oven and bake for about 20 minutes, until the crust is crisp and the cheese is melted.
  10. Slice and Serve: Carefully remove the skillet from the oven. Slice the pizza and Yum Yum Get Ya Sum!
