Whether you’re hosting game day, feeding a hungry crowd, or looking for a fun family dinner, these loaded nachos deliver bold flavor and plenty of crunch. Top them with fresh avocado, tomatoes, jalapeños, cilantro, or your favorite fixings, and get ready for a platter that’s guaranteed to disappear.

Ingredients

  • 1 packet Dan-O's Chili Seasoning Packet - Smoky Chipotle
  • 1 tbsp Dan-O’s Chipotle seasoning
  • 1 lb ground beef
  • 1 small onion - diced
  • 2 to 3 cups of shredded Mexican blend cheese
  • 1 fresh chopped jalapeño pepper
  • 1 can red kidney beans
  • ½ cup milk
  • 1 cup sour cream
  • 1 can diced tomatoes
  • 2 cans nacho cheese
  • Fresh cilantro for topping - optional
  • Cooking oil

Preparation Instructions

  1. Start by making the smoky chipotle drizzle. In a small bowl, whisk together the milk, sour cream, and Dan-O's Chipotle Seasoning until smooth and pourable. Set it aside in the fridge while you build the nachos.
  2. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the ground beef and cook until it's nicely browned, breaking it into crumbles as it cooks. Drain any excess grease. Add the chopped onion and jalapeño, then cook until softened and fragrant. Then stir in 1 packet of Dan-O's Chili Seasoning Packet – Smoky Chipotle until the beef is coated in bold, smoky flavor.
  3. Bring the chili to a gentle boil, then reduce the heat and let it simmer uncovered for 20–30 minutes, allowing it to thicken and all those flavors to come together.
  4. While the chili simmers, preheat your oven to 375°F and grab a large baking sheet.
  5. Spread the nacho cheese sauce into an even layer across the baking sheet. Spoon the smoky chipotle chili over the cheese, then top everything with a generous layer of shredded cheese.
  6. Bake for 8-12 minutes, or until the cheese is hot, melted, and bubbling.
  7. Meanwhile, spread tortilla chips out on a separate sheet pan or large serving platter. Once the chili is out of the oven, carefully slide or pour the entire cheesy chili mixture right over the chips. (It's messy... and that's exactly how nachos should be.)
  8. Finish with a generous drizzle of the smoky chipotle crema and add your favorite toppings like diced tomatoes, jalapeños, cilantro, green onions, or sliced avocado. Grab a handful, and Yum Yum Get Ya Sum!®
