Lemon Pepper Parmesan Salad

Fresh, crisp, and packed with bold flavor, this Lemon Pepper Parmesan Salad is anything but boring. Featuring juicy seasoned chicken, fresh tomatoes, crunchy homemade Parmesan crisps, and a bright homemade dressing, this salad delivers the perfect balance of texture and flavor in every bite. Finished with Dan-O’s Lemon Pepper Seasoning and dill dressing, it’s an easy lunch or light dinner that’s refreshing, satisfying, and guaranteed to keep you coming back for another forkful.

Ingredients

  • Dan-O’s Lemon Pepper seasoning
  • 4 chicken breast cutlets
  • 4 cups mixed salad greens
  • ¼ cup chopped fresh dill
  • 1.5 cups shredded parmesan cheese - for the crisps
  • cherry tomatoes, halved
  • red onion, sliced thin

Lemon Dill dressing:

  • 2 tsp Dan-O’s Lemon Pepper seasoning
  • 2 tbsp Dan-O’s Dips Dill
  • 1 1/4 cup Greek yogurt
  • 1/2 cup buttermilk
  • 2 tbsp lemon juice (juice of ½ a lemon)

Preparation Instructions

  1. Make the Dressing: Start by combining all of your dressing ingredients in a blender and blend until smooth and creamy. Once it's mixed up, transfer it to the refrigerator and let it chill for at least 30 minutes. Giving the dressing a little time to hang out helps all those bright, tangy flavors come together.
  2. Make the Parmesan Crisps: Preheat your oven to 400°F and line a baking sheet with parchment paper or a silicone baking mat.
  3. In a small bowl, mix the Parmesan cheese with any additional herbs or seasonings you're using. Divide the mixture into four equal piles on the baking sheet, leaving a little room between each one.
  4. Bake for 3 to 5 minutes, or until the cheese is completely melted and lightly golden around the edges.
  5. Remove from the oven. They may still look bubbly at first, but don't worry—that's part of the process.
  6. Let them cool for a minute or two until they crisp up, then carefully remove them with a metal spatula.
  7. Cook the Chicken: Season the chicken generously with Dan-O's Lemon Pepper Seasoning. Cook until golden, juicy, and fully cooked through, then slice or dice it into bite-sized pieces.
  8. Build the Salad: In a large salad bowl, add your greens and top with fresh dill, red onion, tomatoes, and pieces of seasoned chicken.
  9. Pour the dressing over the salad and finish with the Parmesan crisps, then serve immediately. Yum Yum Get Ya Sum!®
