These Breakfast Hand Pies are the ultimate grab-and-go breakfast, packed with fluffy scrambled eggs, crispy bacon, melty cheese, and flaky golden pastry. Made with simple ingredients and seasoned with Dan-O’s SPG Tri-O and Cheesoning, they’re loaded with savory flavor in every bite. Whether you’re meal prepping for busy mornings, feeding a crowd for brunch, or looking for a fun handheld breakfast idea, these easy breakfast hand pies are guaranteed to become a family favorite.

Ingredients

  • Dan-O’s SPG Tri-O (Salt, Pepper, Garlic) Seasoning
  • Dan-O’s Cheesoning
  • 1 package Unroll & Bake Pie Crusts
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 6 eggs, beaten with 1 tbsp water or milk
  • 4 slices of bacon or turkey bacon, cooked until crisp and crumbled
  • 2 cups baby spinach
  • diced red bell pepper (optional)
  • 1 - 2 cups diced mushrooms (optional)
  • 1 cup shredded white cheddar cheese
  • 1 tbsp butter

Preparation Instructions

  1. Start by preheating your oven to 375°F and lining a baking sheet with parchment paper.
  2. Heat the butter in a non-stick skillet over medium heat. Pour in all but 1 tablespoon of the beaten eggs, saving the remaining egg for your egg wash later.
  3. As the eggs cook, season them with Dan-O's SPG Tri-O and gently scramble until they're light, fluffy, and just about set. Finish them off with a sprinkle of Dan-O's Cheesoning for that extra cheesy flavor boost.
  4. In a separate skillet, heat the olive oil and cook the mushrooms and red peppers until they're softened and full of flavor.
  5. Add the bacon and spinach to the warm eggs and cover the skillet for a minute or two to help the spinach wilt. Then stir everything together and fold in the cheese until it's melty and irresistible.
  6. Roll out your pie crusts and cut each one into 6 triangles. Spoon the filling onto 6 of the triangles, adding the mushrooms and peppers to whichever ones you'd like.
  7. Brush the edges with the reserved egg wash, then top with the remaining pastry triangles. Press the edges together and seal them with a fork for that classic hand pie look.
  8. Transfer the hand pies to your prepared baking sheet and brush the tops with the remaining egg wash. This is how you get that beautiful golden-brown finish.
  9. Bake for 25 to 30 minutes, or until the pastry is flaky, puffed, and perfectly golden.
  10. Let them cool just enough so you don't burn your mouth, then dig in. Yum Yum Get Ya Sum!®
