Perfect for game day, parties, or a cozy night in, this easy recipe combines simple ingredients to create a flavorful treat that will leave everyone wanting more. Ready in under an hour, these Irish Nachos are not only quick to prepare but also offer a delightful fusion of flavors that will tantalize your taste buds.

Ingredients

  • 1 tsp Dan-O’s Original Seasoning
  • 2 Idaho potatoes, sliced ¼ inch thick
  • 1 tbsp olive oil or spray
  • 1 cup Irish cheddar or sharp cheddar cheese, finely shredded
  • 2 Green onions, minced
  • Salsa and sour cream, if desired

Cheese Sauce:

  • 2 tsp Dan-O’s Tac-O Seasoning
  • 1/4 cup butter
  • 3 tbsp all-purpose flour
  • 3/4 cup milk
  • 2/3 cup Guinness beer
  • 2 tsp Dijon mustard
  • 2 1/2 cups Irish cheddar cheese, shredded

Preparation Instructions

  1. Cook the Potatoes: Preheat your oven to 450°F. Thoroughly scrub the potatoes and slice them into approximately ¼ inch thick rounds.
  2. Arrange the potato slices on a large sheet pan in a single layer, making sure they don’t touch each other. Lightly spray them with olive oil and sprinkle with Dan-O's Original seasoning.
  3. Slide that pan into the oven and let those babies bake for 20 minutes. After that, flip them over and bake for another 20 minutes.
  4. Once golden and crispy, stack them on a plate like a potato pyramid and drizzle with cheese sauce, because what’s better than potatoes? Potato nachos!
  5. Finish by sprinkling with chopped green onions.

Cheese Sauce:

  1. In a saucepan, heat the butter over medium heat until it starts to sizzle. Then, remove from heat.
  2. Whisk in the flour until well combined, then return to low heat and cook this flour-butter mixture for 2 minutes. Turn off the heat again.
  3. Gradually whisk in the milk, beer, mustard, and Dan-O’s Tac-O seasoning, combining well.
  4. Switch the heat to medium-low and continuously whisk until the mixture becomes thick and bubbly; then turn off the heat.
  5. Stir in the cheese and whisk until the sauce is smooth and creamy.
  6. Taste the sauce and adjust the seasoning as desired.
