Ingredients

  • 2 tbsp Dan-O’s Cheesoning
  • 2 tbsp Dan-O’s Italian-O
  • 1 lb uncooked spaghetti noodles
  • 2 whole eggs
  • 2 egg yolks
  • ½ cup Romano cheese, grated
  • 2 tbsp minced garlic
  • 4 tbsp pancetta, diced

Preparation Instructions

  1. In a large skillet over medium heat, add the minced garlic and diced pancetta. Sauté until the garlic is fragrant and the pancetta is crispy, about 3-4 minutes. Remove from heat.
  2. Cook the Pasta: In a large pot, bring salted water to a boil and cook the spaghetti noodles for 6 minutes or until al dente. Reserve 4 ounces of the boiling pasta water, then drain the pasta.
  3. Combine Pasta and Flavors: Transfer the cooked pasta to the skillet with the sautéed garlic and pancetta. Toss to combine, adding the reserved 4 ounces of boiling pasta water to the skillet.
  4. Prepare the Egg Mixture: In a mixing bowl, whisk together the Romano cheese, whole eggs, egg yolks, Dan-O’s Cheesoning, Dan-O’s Italian-O, and 2 ounces of the reserved pasta water until well combined.
  5. Create the Sauce: Quickly pour the egg and cheese mixture into the skillet with the pasta. Stir vigorously until the sauce thickens and coats the pasta noodles, about 1-2 minutes.
  6. Serve garnished with additional Romano cheese if desired.
