This Chili Lime Chicken and Rice recipe is incredibly simple, requiring just a few ingredients, and is perfect for a quick weeknight dinner.

Ingredients

  • 1/4 bottle of Dan-O’s Chili-Lime
  • 1.5 lb chicken breast, cut into bite-sized pieces
  • 12.5 oz Jarritos Guava Soda (1/2 bottle)
  • Cooked rice (microwaved or prepared as per package instructions)

Preparation Instructions

  1. Prepare the Chicken: Cut the chicken breast into small, bite-sized pieces.
  2. Place the chicken pieces in a large ziplock bag. Pour in 1/2 bottle of Jarritos Guava Soda and add Dan-O’s Chili Lime. Seal the bag and mix well to ensure the chicken is coated. Let it marinate in the fridge for at least 1 hour.
  3. After marinating, heat a pan over medium heat and add the chicken. Cook for about 10 minutes, allowing the moisture to cook out and the chicken to brown slightly. The internal temperature should be 165°F.
  4. Plate your rice and top it with the cooked chicken. Drizzle some of the flavorful juices from the pan over the top for added taste.
