One-Pan Cajun Pork and Cabbage Skillet

This Cajun Cabbage Pork Skillet is a big ol’ pan of comfort food, Dan-O’s style. We’re stacking bacon, Italian sausage, ham, cabbage, butter, beef stock, and a one-two punch of Dan-O’s SPG Tri-O and Dan-O’s Cajun Seasoning. It’s smoky, savory, buttery, and just spicy enough without going overboard. Get your biggest skillet, sprinkle generously, and let’s make something Dan-Good.

Ingredients

  • 2 tbsp Dan-O’s SPG Tri-O (Salt, Pepper, Garlic)
  • 2 tbsp Dan-O’s Cajun Seasoning
  • 1/2 lb bacon, diced
  • 1/2 medium onion, diced
  • 1 lb mild Italian sausage, casing or paper removed
  • 3/4 lb slab ham, diced into chunks
  • 1 whole head green cabbage, chopped
  • 1/2 stick Kerrygold butter
  • 2 cups beef stock

Preparation Instructions

  1. Cook the Bacon: Heat your biggest cast iron skillet or large pan over high heat. Add the diced bacon and cook until it starts rendering down and creating grease in the pan.
  2. Add the Onion and Sausage: Add the diced onion to the skillet and stir it into the bacon. Add the mild Italian sausage, making sure to remove any casing or paper first, then break it up in the pan as it cooks. Stir everything together so the bacon, onion, and sausage can cook evenly.
  3. Add the Ham: Dice the slab ham into chunks, then add it to the skillet. Stir everything together and let the mixture cook for another 5 minutes so the ham can heat through and the bacon can continue cooking.
  4. Prep and Add the Cabbage: Chop the cabbage into small pieces, cutting around and removing the stem. Add the cabbage right on top of the pork mixture in the skillet.
  5. Season the Skillet: Sprinkle the cabbage and pork mixture with Dan-O’s SPG Tri-O and Dan-O’s Cajun Seasoning. Stir everything together so the seasonings start working through the cabbage and meat.
  6. Add Butter and Beef Stock: Add the Kerrygold butter directly into the skillet and let it melt into the cabbage and pork mixture. Pour in the beef stock, stir everything together, and keep cooking over high heat until the cabbage begins to soften.
  7. Cover and Cook: If you have a lid that fits the skillet, place it on top to help speed up the cooking process. Turn the heat down to medium and cook for about 10 minutes, or until the cabbage is on its way to becoming tender.
  8. Reduce the Liquid: Remove the lid and turn the heat back up to high. Let the skillet continue cooking uncovered so some of the moisture can reduce down, leaving a little juice in the bottom of the pan.
  9. Serve: Turn off the heat, scoop the Cajun Cabbage Pork Skillet into a big bowl, and Yum Yum Get Ya Sum!
