What is Delicata Squash?
Squash! One of the most versatile vegetables on Earth, they come in many varieties but today we’re talking about Delicata Squash. Delicata Squash, also known as peanut, bohemian, or sweet potato squash is part of the Cucurbita pepo family. This is the family that turns out winter squash and pumpkins, but it does have a subfamily that includes a variety of summer squash like zucchini, spaghetti, and acorn. Delicata itself is labeled under winter squash due to its hard flesh, and being harvested late in the season. That said, it’s more similar to summer squash due to its thin skin. All that means for us is that delicata squash is much easier to prepare than other winter squash! Delicata squash isn’t just great for flavor, or prep work but it’s a great visual with its colorful striped skin. Delicata was first introduced in the late 1800s but fell out of favor during the great depression because it is very susceptible to disease, typically has low yield, and a short shelf life. But by the end of the 20th century, the squash was back in a disease-resistant variety!

Ingredients
- 4 delicata squash
- Pistachio Oil
- Dan-O’s Cheesoning
Prep Time

Cook Time
20 Mins
Instructions
- Cut the ends of each squash and slice lengthwise
- Using a spoon, remove the seeds
- Now slice across the squash in ½” sections
- Cover a baking sheet with parchment paper
- Add cut squash to baking sheet and cover with pistachio oil
- Sprinkle with Dan-O’s Cheesoning and bake at 450 F for 20 minutes
- Serve immediately and enjoy!
