What is a Chipotle anyway?
A Chipotle, simply put, is a smoked dried Jalapeno. The name comes from the Nahuatl (the Aztecs language) meaning “Smoked Chili”. It’s believed that the Chipotle was encountered by Christopher Columbus on his New World voyage where he brought it back to Spain, and it diffused across Europe and Asia from there. Nowadays, chipotles are predominantly sourced from Mexico in two varieties: Morita, and Meco. Morita, meaning “small mulberry” in Spanish, is grown in the Chihuahua state. They tend to be darker than the Meco with a red-purple exterior and they’re smoked for less time. Because of this, many cultures consider them inferior to Meco. Meco appears more like the end of a cigar, being larger and a more muted tan in color with a dusty surface. Meco are smokier in flavor, and the preferred chipotle of many natives! However, Meco isn’t commonly found across the Mexico border.
