Three Meat Root Beer Chili

This is not your average pot of chili! We’re bringing together ground beef, country sausage, and tender filet mignon, then using root beer instead of beef broth to add a little sweetness and build a rich, bold chili base. Dan-O’s Tac-O Seasoning Packet - Birria brings deep, savory flavor, while Dan-O’s Chili Seasoning Packet - Mild adds that cozy, classic chili taste, and Dan-O’s Chili Seasoning Packet - Smoky Chipotle brings rich, smoky depth with a little kick. The trick is adding the filet mignon at the very end so it stays nice and tender. Root beer and filet mignon in chili might sound crazy, but you don’t know till you Dan-O!

Ingredients

  • 1 packet Dan-O’s Tac-O Seasoning Packet - Birria
  • 1 packet Dan-O’s Chili Seasoning Packet - Mild
  • 1 packet Dan-O’s Chili Seasoning Packet - Smoky Chipotle
  • 2 tbsp Dan-O’s Chili Lime Seasoning, for topping
  • 1 lb 80/20 ground beef
  • 1 medium onion, diced
  • 1 lb Old Folks Country Sausage
  • 2 (12 oz) cans root beer
  • 2 (4 oz) cans diced Hatch green chiles
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 (15 oz) cans pinto beans, undrained
  • 6 oz ketchup
  • 3 (1 lb) filet mignon steaks, cut into small cubes
  • 1½ cups shredded cheddar cheese, for topping

Preparation Instructions

  1. Cook the Ground Beef: Add the ground beef to a large pot over medium-high heat. Break it apart as it cooks and continue cooking until browned. Drain and discard the rendered grease.
  2. Add the Onion and Sausage: Add the diced onion and country sausage to the pot. Break the sausage apart and cook, stirring occasionally, until the sausage is browned and the onion begins to soften. Leave the rendered sausage fat in the pot for added flavor.
  3. Season the Meat: Add the Dan-O’s Tac-O Seasoning Packet - Birria, Dan-O’s Chili Seasoning Packet - Mild, and Dan-O’s Chili Seasoning Packet - Smoky Chipotle. Stir until the meat mixture is evenly coated with the seasonings.
  4. Build the Chili: Pour in the root beer and stir to combine. Add the diced Hatch green chiles, diced tomatoes, pinto beans with their liquid, and ketchup. Stir everything together until well combined.
  5. Simmer the Chili: Cover the pot and reduce the heat to low, keeping it just high enough to maintain a gentle simmer. Cook for 15–20 minutes, stirring occasionally, until the onion is tender and the flavors have come together.
  6. Prepare the Filet Mignon: While the chili simmers, slice the filet mignon into thin strips, then cut the strips lengthwise and crosswise into small, bite-sized cubes. Keeping the pieces small helps the filet cook quickly when it is added to the hot chili.
  7. Finish With the Filet Mignon: Add the diced filet mignon to the chili a little at a time, separating the pieces as they go into the pot so they do not clump together. Stir the filet into the chili, cover, and simmer for about 1 minute. Once the chili returns to a simmer, remove the pot from the heat.
  8. Serve: Ladle the chili into bowls and top with shredded cheddar cheese and a sprinkle of Dan-O’s Chili Lime Seasoning for a little citrus heat. Yum Yum Get Ya Sum!
