Ingredients

  • 1 packet Dan-O's Chili Seasoning Packet - Smoky Chipotle
  • 1 16 oz block of Velveeta cheese, cut into 1 inch cubes
  • 1/2 pound smoked Gouda cheese, cut into 1 inch cubes
  • 1 can fire-roasted diced tomatoes
  • 1 can fire-roasted corn or Mexican street corn
  • ¼ cup chopped chipotle chilis in adobo sauce (canned)
  • fresh cilantro
  • tortilla chips
  • 1can pinto or black beans

Preparation Instructions

  1. Preheat your oven to 350°F and grab a 3-quart baking dish.
  2. Add about two-thirds of the cubed cheese to the baking dish, spreading it into an even layer. Save the remaining cheese for the top—you'll thank yourself later.
  3. In a large mixing bowl, combine the beans, corn, diced tomatoes, chipotle peppers, and 1 packet of Dan-O's Smoky Chipotle Chili Seasoning. Stir until everything is evenly coated with that bold, smoky flavor.
  4. Pour the chili mixture over the cheese cubes, then scatter the remaining cheese across the top for an extra cheesy finish.
  5. Bake for 20–25 minutes, or until the cheese is completely melted and the edges are hot, bubbly, and impossible to resist.
  6. Remove the queso from the oven and give everything a good stir, melting all that gooey cheese into the chili mixture until it's creamy and smooth.
  7. Let the dip cool for about 5 minutes, then garnish with fresh cilantro.
