If you’re looking for the ultimate Easter side dish that brings big flavor with simple ingredients, this carrot gratin is about to steal the show. Thinly sliced carrots and potatoes are layered with a rich, garlicky cream sauce, fresh rosemary, and plenty of melty cheese—then topped with a crispy, golden crust. It’s the perfect balance of cozy comfort, making it a standout for weeknight dinners or holiday spreads.

Ingredients

  • 3 tsp Dan-O’s SPG Tri-O (Salt, Pepper, Garlic) Seasoning
  • 4 tbsp salted butter, plus more for the baking dish
  • 2 lb carrots
  • 1 lb russet potatoes (about 2 large)
  • 2 cups heavy cream
  • 1 cup whole milk
  • 5 sprigs fresh rosemary (1 chopped)
  • 2 tsp garlic, minced
  • 2 tbsp all-purpose flour
  • 3/4 cup breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 2 cups grated gruyère cheese

Preparation Instructions

  1. Preheat that oven to 350°F and butter up a 9x13 baking dish.
  2. Peel your carrots and slice your potatoes lengthwise. Then grab a mandoline (or a sharp knife if you’re feelin’ brave) and slice everything nice and thin—about 1/8 inch. Toss ‘em together in a big bowl and set aside.
  3. In a small saucepan, add heavy cream, milk, 4 rosemary sprigs, garlic, and 2 tablespoons butter. Warm it low and slow until it just starts to simmer—about 5–7 minutes.
  4. Kill the heat, pull out those rosemary sprigs, then whisk in your flour and 2 teaspoons of Dan-O’s SPG Tri-O.
  5. Melt the remaining 2 tablespoons of butter in a microwave-safe bowl. Then toss in the breadcrumbs, parmesan, chopped rosemary, and 1 teaspoon of Dan-O’s SPG Tri-O. Mix it up till everything’s coated and ready to crisp.
  6. Time to layer it up! Add half your veggies to the dish, pour over half the cream mixture, and hit it with half the gruyère. Repeat that magic one more time.
  7. Top it off with that seasoned breadcrumb mix.
  8. Cover with foil and bake for 45 minutes. Then uncover and let it cook another 30–35 minutes until it’s golden, bubbly, and straight-up irresistible. Yum Yum Get Ya Sum!®
