Ingredients

  • 1 tbsp Dan-O's Taco
  • 1/4 tsp Dan-O's Chipotle
  • Zero carb tortillas
  • 1/2 cup salsa
  • 1 can (15 oz) no salt added black beans
  • 1/2 cup fat free sour cream
  • 1.5 tsp lime juice
  • 1 cup shredded reduced fat Mexican cheese blend
  • 2 medium plum tomatoes, diced
  • 2 medium green onion stalks, sliced

Preparation Instructions

  1. Preheat oven to 350°F.
  2. Lightly spray shallow baking dish with cooking spray.
  3. In medium bowl, mix together the black beans, salsa, and Dan-O's Seasonings.
  4. Spoon some mixture down the center of one tortilla and roll up. Place tortilla with the seam side down in baking dish. Repeat with remaining filling and tortillas.
  5. Bake for 15 minutes.
  6. Meanwhile, stir together the sour cream and lime juice.
  7. Remove cooked enchiladas from oven and spread the sour cream mix over the top. Sprinkle with cheese, tomatoes and green onions.
  8. Bake another 5 minutes.
