Chicken with Lemon Dijon Leeks

Add some Crunch to your dish! This flavorful and healthy recipe combines the mild, earthy taste of leeks with the fresh zing of lemon and mustard for a Dantastic® meal. You can just make the leeks and use it as a side dish or a topping to something else. Serve it with a side of roasted new potatoes, generously seasoned with Cheesoning®.

Ingredients

  • 1-2 tbsp Dan-O's Crunchy Seasoning
  • 1-2 Chicken breasts
  • 2 stalks leeks
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp Dijon mustard
  • 1/2 diced onion

Preparation Instructions

  1. Cut leeks in half lengthwise, then cut into 2 inch pieces. Rinse well, leeks have a lot of silt trapped in them.
  2. Cover chicken breasts in Dan-O's Crunchy on both sides and cook in oil or bake (at 400°F for about 20-30 minutes) until done - 165°F internal temperature.
  3. Bring a large skillet of salted water to a simmer. Add leeks and onions and cook for 7-10 minutes or until just tender. Drain well.
  4. In bowl, mix together lemon juice, olive oil, Dijon mustard and 1/2 tbsp Dan-O's Crunchy. Add leeks and onions and stir.
  5. Pour leeks over top of chicken breast and sprinkle with more Crunchy if desired.

  1. I was amazed at how much my boyfriend loved this dish!! I just bought my first Dan-O seasoning (original) and it’s giant!! I wasn’t ready to buy another flavor to make this recipe (looked for a recipe to use up some extra leeks). I used my original flavor Dan-O and added Everything but the Bagel seasoning for the crunch! It was a big hit!!!
