For the best flavor, let the pumpkin chili simmer for a longer time to allow the spices to meld together. You can also prepare it a day in advance, as the flavors tend to improve overnight.

Ingredients

  • 3 tbsp Dan-O’s Tac-O
  • 1/2 tsp salt
  • 1 small pumpkin, deseeded, peeled and diced or 1 (15-ounce) can of pumpkin puree
  • 1 lb ground beef or turkey if you want to add
  • 1 can (14.5 oz) diced tomatoes
  • 1 can red kidney beans or pinto or mixed beans
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 tbsp olive oil
  • 2 cups vegetable broth

Preparation Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent. If you are choosing to add meat to this chili then add it now and cook until brown and drain fat from pan.
  3. Add the diced pumpkin and cook for about 5 minutes, stirring occasionally.
  4. Stir in the canned tomatoes and Dan-O’s Tac-O Seasoning.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat to low and let the chili simmer for about 45 minutes, or until the pumpkin is tender.
  7. Adjust the seasoning to taste and serve hot. Garnish with sour cream, cheese and green onions if desired.
