Each bite is further enriched by the sweet and savory caramelized onions, creating a satisfying and indulgent experience.

Ingredients

  • 1 ribeye roast
  • Compound butter
  • Dan-O's Preem-O Seasoning
  • Dan-O's Crunchy Seasoning
  • Parsley
  • Garlic
  • Onions (for both roast and caramelized onions)
  • Carrots
  • Celery
  • Beef stock (3-4 cups)
  • Worcestershire sauce (for caramelized onions)
  • Soy sauce (for caramelized onions)
  • Mayo
  • Old-style mustard (or horseradish)
  • Ciabatta baguette

Preparation Instructions

  1. Preheat the Oven: Set your oven to 250°F.
  2. Prepare the Roasting Pan: In a roasting pan, lay out onions, carrots, and celery. Pour 3-4 cups of beef stock over the vegetables.
  3. Season the Ribeye Roast: Cover the ribeye roast generously with compound butter. Then, thoroughly coat it with both Dan-O's Preem-O and Crunchy.
  4. Roast the Ribeye: Place the seasoned ribeye on a rack above the vegetables in the roasting pan. Roast until the internal temperature of the meat reaches 120°F.
  5. Rest the Meat: Once roasted, remove the ribeye from the oven. Let it rest for 30 to 60 minutes before slicing. This step ensures the meat is juicy and tender.
  6. Prepare the Au Jus: Strain the dripping and stock from the roast into a large bowl. This will be used for dipping the sandwich.
  7. Caramelize the Onions: Melt 2 tablespoons of butter in a frying pan. Add the chopped onions and cook until they are soft and beginning to brown. Add Worcestershire sauce and soy sauce, stirring often. Continue cooking on reduced heat until you achieve the desired doneness.
  8. Make the Spread: In a small bowl, mix mayo with old-style mustard. Alternatively, you can substitute the mustard with horseradish for a different flavor.
  9. Prepare the Sandwich: Slice the ciabatta baguette. Spread the mayo-mustard mixture (or mayo-horseradish mixture) on the bottom slice. Add sliced prime rib and caramelized onions.
  10. Final Touches: Assemble the sandwich and serve with a side of the prepared au jus for dipping.
