Ingredients
1 large sweet potato, peeled
2 scallions, chopped
2 egg whites
2 tsp Olive oil
1 cup unsweetened applesauce
2 tsp Dan-O's Tac-O
1/2 tsp Dan-O's Crunchy
Preparation Instructions
Grate the potato into a large bowl
Add the scallions, egg whites, Dan-O's, mix to combine
Heat 1 tsp of oil in a nonstick skillet over medium heat
Drop the potato mixture by 1/4 cupful into the skillet to make 3 cakes. Flatten them into 3" rounds.
Cook for 6-8 minutes, turning once, or until golden brown
