Healthy Sweet Potato Hashbrowns

A healthy and delicious twist on classic hashbrowns or pancakes that even your kids will love! Dan-O’s Tac-O and Crunchy team up to deliver a flavor-packed punch. Perfect for breakfast or even as a snack, these are quick and easy to whip up.

Ingredients

  • 1 large sweet potato, peeled
  • 2 scallions, chopped
  • 2 egg whites
  • 2 tsp Olive oil
  • 1 cup unsweetened applesauce
  • 2 tsp Dan-O's Tac-O
  • 1/2 tsp Dan-O's Crunchy

Preparation Instructions

  1. Grate the potato into a large bowl
  2. Add the scallions, egg whites, Dan-O's, mix to combine
  3. Heat 1 tsp of oil in a nonstick skillet over medium heat
  4. Drop the potato mixture by 1/4 cupful into the skillet to make 3 cakes. Flatten them into 3" rounds.
  5. Cook for 6-8 minutes, turning once, or until golden brown
  6. Repeat with remaining potato mix
  7. Serve with applesauce
