Ingredients

  • 3 1/2 tbsp Dan-O’s Cajun Seasoning
  • 12 large eggs
  • 1 jalapeño, finely chopped
  • 3 dill spears, chopped
  • 2 tbsp Creole injection butter
  • 1 1/2 tbsp yellow mustard
  • 2 tbsp mayonnaise
  • 1/2 cup all-purpose flour
  • 1 cup panko bread crumbs
  • 2 eggs, beaten
  • 5 cups oil (for frying)

Preparation Instructions

  1. Easy Peel Eggs: Must have the water boiling before adding the eggs. Boil the eggs for 10 minutes.
  2. Drain the water and let the eggs rest in the pot for 5 minutes. Transfer them to an ice bath for 10 minutes to cool. This is guaranteed for an easy peel.
  3. Prepare the Filling: Cut each peeled egg in half lengthwise and scoop out the yolks into a medium-sized mixing bowl.
  4. Add the jalapeño, dill spears, 1.5 tbsp Dan-O’s Cajun, Creole injection butter, yellow mustard, and mayonnaise to the bowl. Mash and mix all the ingredients together until well combined. Set aside.
  5. Set up a breading station: Add all-purpose flour in the first bowl. In the second bowl, beat the 2 eggs to create an egg wash. In the third bowl, mix the panko bread crumbs with 2 tablespoons of Dan-O’s Cajun.
  6. Bread Each Egg Half: Dredge each egg half in flour, shaking off the excess. Dip it in the egg wash to coat well. Coat with the panko mixture, pressing gently to adhere.
  7. Fry the Eggs: In a large pan, heat the oil to 325°F. Cooking in small batches, carefully place the breaded egg halves in the pan with the rounded side facing down. Fry until the bottom is golden brown, then flip the egg halves and cook the other side until golden, about 1 minute per side.
  8. Remove the fried eggs and place them on a paper towel-lined plate to drain excess oil.
  9. Assemble and Serve: Take the mashed yolk mixture and spoon it into the fried egg halves. Sprinkle Dan-O’s Cajun on top for garnish.
