This dish offers a delectable blend of creamy potatoes, seasoned with the unique flavors of Dan-O’s Cheesoning, and harmonized with eggs, ham, and cheese. Each bite brings a satisfying crunch of golden potatoes, coupled with the tender, savory fillings that melt in your mouth, creating a symphony of Dan-good flavors.

Ingredients

  • 12 small gold potatoes
  • 1 tsp salt
  • 5 eggs
  • Dan-O's Cheesoning Seasoning
  • 8 slices of diced ham
  • ½ red bell pepper, finely diced
  • ½ red onion, finely diced
  • 1 cup shredded mozzarella
  • Optional Garnish: Fresh parsley or chives

Preparation Instructions

  1. Start by parboiling your potatoes in salted water for 8-10 minutes or until they are fork-tender.
  2. Preheat your oven to 400°F (200°C).
  3. Grease or oil a 12-slot muffin tray.
  4. Place the potatoes in the muffin tray and use a shot glass to smash them, creating a ‘well.’
  5. Season each potato with Dan-O’s Cheesoning.
  6. In a medium measuring cup with a spout, beat the eggs. Add the diced pepper, onion, and ham, seasoning again with Dan-O’s Cheesoning. Mix well.
  7. Pour this mixture evenly into each smashed potato.
  8. Top each potato cup with shredded mozzarella and a sprinkle more of Cheesoning Seasoning.
  9. Bake for 20 minutes.
  10. Garnish with fresh parsley or chives, and serve hot.
