The beauty of a Pork Tenderloin is how versatile it is, especially when it comes to stuffing. While we did cream cheese with spinach and asparagus, you can do many different combinations for maximum flavor. One popular stuffing is apple, bacon, rosemary, and pecan! Thick and Juicy

Perhaps the most intimidating part about smoking your Stuffed Pork Tenderloin is keeping it plump and juicy. Thankfully, we’ve got a few tips to keep yours thick and juicy. Number one, and this may seem obvious, is don’t overcook it! Anytime you overcook the meat, it’s going to be dry and chewy but if you monitor the internal temperature throughout the cooking process and pull it out when it reaches an internal temp of about 155 Fahrenheit then you should be good. The second piece of advice we have is to let the Pork, or really any meat, rest before cutting it. As the pork sits, it’ll still gain temperature up until about 160 Fahrenheit, giving you a nice plump and juicy piece of meat.

Ingredients

  • 4 lb pork loin
  • Asparagus
  • 1 bundle of raw Spinach
  • Cream cheese
  • Dan-O’s Crunchy Seasoning

Preparation Instructions

  1. Preheat smoker to 350° F
  2. Trim and unroll pork loin
  3. Spread cream cheese and generously sprinkle with Dan-O’s Crunchy Seasoning
  4. Add spinach and asparagus (raw)
  5. Roll pork loin and wrap with cooking twine
  6. Place on the smoker and cook 1-2 hours (Cook to an internal temp of 155)
  7. Enjoy!
