The Stuff of Legends

The beauty of a Pork Tenderloin is how versatile it is, especially when it comes to stuffing. While we did cream cheese with spinach and asparagus, you can do many different combinations for maximum flavor. One popular stuffing is apple, bacon, rosemary, and pecan! Once you’ve mastered ours, start experimenting with your own twists on a Stuffed Pork Tenderloin.

Thick and Juicy

Perhaps the most intimidating part about smoking your Stuffed Pork Tenderloin is keeping it plump and juicy. Thankfully, we’ve got a few tips to keep yours thick and juicy. Number one, and this may seem obvious, is don’t overcook it! Anytime you overcook the meat, it’s going to be dry and chewy but if you monitor the internal temperature throughout the cooking process and pull it out when it reaches an internal temp of about 155 Fahrenheit then you should be good. The second piece of advice we have is to let the Pork, or really any meat, rest before cutting it. As the pork sits, it’ll still gain temperature up until about 160 Fahrenheit, giving you a nice plump and juicy piece of meat.

We’re gathered here today to lay to rest the topic of why we lay things to rest

If you’re not familiar with smoking meats, you may be curious as to why laying it to rest is so important. Resting meat allows the juices to redistribute and settle evenly throughout. This translates to when you do cut into it, those juices stay inside the meat and keep it nice and moist instead of leaking out all over the cutting board. This isn’t just the key to a nice Smoked Stuffed Pork Tenderloin but a nice steak, or even roast as well. Learning this now will improve your future meals for years to come.
