Fried rice is one of the most popular dishes in the world. It's easy to make comfort food that can be modified for a variety of diets! Here’s a pro tip on making shrimp fried, it’s best with 2-3 day old Jasmine rice.

We can trace the origins of fried rice back to the Sui Dynasty, more specifically somewhere in Yangzhou City between 589 - 618 A.D. It’s believed the meal came about as a matter of convenience and fiscal planning where lower income families would consume fried rice as a way to use rice and vegetables that were past their prime. However the stir fry technique used to make fried rice today didn’t become popular until the late Ming dynasty (1368-1644 AD). Fried rice grew in popularity in America during the influx of Chinese immigrants during the gold rush.

During the gold rush, Chinese workers in America become employed in generally low-income sectors such as agriculture, factories, mining or railroad construction. Some immigrants would prepare comfort food of their homelands and share with the community. This began the slow diffusion of dishes like shrimp fried rice in America.

Ingredients

  • 9 cups of day old cooked jasmine rice
  • 2 lbs shrimp
  • 8 oz baby carrots
  • 8 oz English peas
  • 16 oz canned baby corn
  • 4 eggs
  • 1 small white onion (diced)
  • Olive oil
  • Dan-O’s Spicy Seasoning
  • Sesame oil
  • Hoisin sauce
  • Oyster Sauce
  • Soy Sauce
  • Japanese BBQ Sauce like Bachan’s
  • Fly by Jing Sichuan Chili Crisp
  • Sriracha

Preparation Instructions

  1. Preheat a griddle to medium-high heat, and coat with olive oil.
  2. Once up to heat, add the rice to the griddle.
  3. Make a well in your rice exposing the griddle, and then add 4 eggs. Cook sunny side up, then coarsely chop and add to rice.
  4. At the same time as the eggs but on different sections of the griddle, cook the shrimp and vegetables.
  5. Season veggies and shrimp generously with Dan-O’s Spicy Seasoning.
  6. Once the shrimp, and vegetables are cooked then add to rice
  7. Season with sesame oil, oyster sauce, hoisin sauce, soy sauce, Sriracha, and Japanese BBQ sauce until well incorporated. Taste and adjust to personal preference, add more Dan-O’s Spicy Seasoning if desired. Serve and enjoy!
