Southern-Style Chicken Fried Steak

You may have had chicken fried steak at popular some chain or diner, but trust me, this is one you’re going to want to have homemade. This southern-style chicken fried steak recipe comes straight from Kentucky where the Dan-O’s Seasoning and bourbon flow like wine! You’ll even learn how to make gravy if you don’t know how. Yeehaw!

This recipe starts off with cube steak, a tender cut of beef that is pre-tenderized by a butcher. Don’t hold me to it, but I think it was made specifically for chicken fried steak. Other items you’ll want handy are eggs, buttermilk, regular milk, flour, and Dan-O’s Seasoning. You don’t need to fully fry these steaks, as a shallow pan-fry does the trick.

Now with this particular style of frying, your coating will be a bit dark by the time your steak is cooked. I’m here to tell you, this darkish color brings a ton of flavor, and it’s usually not burned (unless it’s burned). If you simply cannot live with darker coating on your chicken fried steak, fry each side for a few minutes and finish it in the oven to your desired internal temperature. I recommend going to at least 150 degrees. Don’t forget to save some drippings for the gravy!

If you don’t have buttermilk handy, make your own! I make mine by mixing together a cup of milk and a tbs of something acidic (lemon juice or vinegar) then letting it rest a few hours. But you can buy some from the store. Also, my gravy recipe is very simple, so if you have a better option go for it. If you have no faith in your gravy skills, just get the stuff in the pouch.

So here you go! The southern glory that is chicken fried steak, at home! Cooked slightly below well done and made with homemade gravy. You deserve this.

Ingredients

  • 2-3 cube steaks (or how many you want to make)
  • 2 ½ cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Hot sauce
  • 1 egg
  • ½ cup buttermilk
  • Dash of hot sauce
  • 2 cups of milk
  • Salt and pepper
  • 3 tbs Dan-O’s Original Seasoning

Preparation Instructions

  1. Dry off your cube steaks with a paper towel
  2. Mix together about 2 cups of flour, baking powder, baking soda, and 3 tbs Dan-O’s seasoning onto a plate.
  3. Mix together buttermilk, egg, and a dash of hot sauce into a shallow dish.
  4. Dredge each cube steak in flour mixture, then dip in batter (shaking off excess), and back into the flour mixture. Place on a baking sheet to rest until all steaks are coated.
  5. Preheat about half an inch of oil in a pan (to 300-325 degrees) and preheat your oven to 250 degrees.
  6. Pan-fry steaks for about 3 and a half minutes on each side. Remove from oil and place on paper towels, then add to a baking sheet and place in oven to stay warm (and or finish cooking).
  7. Make your gravy. Drain grease from the pan, and then add 4 tbs of grease back in. Add 4 tbs of flour to the grease, and turn up the heat to medium. Slowly whisk in milk and bring to a low boil. Reduce heat and stir for 7-10 minutes until gravy thickens up. Salt and pepper to taste.
