Ingredients
For Jackfruit:
- Dan-O’s Hot Chipotle Seasoning (to taste)
- 2 tbsp avocado oil
- Salt & pepper (to taste)
- Guava BBQ sauce
- 4 oz guava paste
- 1 8 oz can tomato sauce (unsweetened unsalted)
- 2 nodes fresh ginger
- 3 tbsp liquid amino
- 2 tbsp dijon mustard
- ½ sweet onion
- 1 whole red onion
- 2 whole poblano peppers
- 3 small red Thai peppers
- ¼ cup champagne vinegar
- 1 garlic bulb
For Tortillas:
- 2 cups masa harina (corn flour)
- 2 cups water
- Salt to taste

Instructions
- Harvest jackfruit making sure to remove all white fibrous peel just looking for the fruit pods
- Season jackfruit generously with Dan-O’s, salt, and avocado oil
- Mince half a sweet onion and add to large pan until it begins to sweat then add in seasoned jackfruit and minced ginger reduce heat to medium flame stirring occasionally
- In a small pan or oven tray place, all peppers garlic, and red onion cut into large pieces seasoned lightly with salt and avocado oil place in a 450-degree oven for 25 minutes
- Remove roasted vegetables and add to blender with tomato sauce and guava paste if too thick add water SPARINGLY looking for ketchup like consistency
- Add your guava sauce to the jackfruit then add in your liquid aminos, Dijon, and champagne vinegar
- Reduce heat once again and allow to come together about 5-7 minutes
- Transfer sauced jackfruit to an oven sheet and place in a 450-degree oven until the fruit begins to pull apart (about 20 minutes)
- Combine 2 cups of masa harina with salt, then 2 cups water SLOWLY to form a dough.
- Cut then flatten out your dough into small discs lightly grease the pan with oil and toast each side for about 2-3 minutes
- Remove your jackfruit place in tortillas and optionally garnish with curly parsley or cilantro
