If you’ve ever had elotes, odds are you love them. If you haven’t then you’re definitely missing out! These Spicy Dan-O’s Elotes are super easy, flavor-packed, and affordable. They’re the perfect addition to your taco night, steak night, or just whenever!
For cooking the corn, I like to do a combination of boiling and grilling. I feel like grilling your corn all the way through can dry it out. So I boil, then finish on the grill for a little char and grilled flavor. And while some folks like crema instead of mayo, I have found it to be too runny and the seasoning and cheese doesn’t stick so well. If you like crema, maybe do 2 parts mayo, 1 par crema.
The cheese for these elotes is cotija! This is a Mexican sprinkling cheese, similar to parmesan. It’s salty, mild, and delicious. For your seasoning, you could go straight Dan-O’s, but I like the color alternation of paprika and spicy Dan-O’s. The paprika has nice spice and smokiness too, so it’s always good on elotes.
Serve your Spicy Dan-O’s Elotes with tacos, steak, grilled chicken, or whatever! Enjoy!

- 1 ear of corn per person
- Lime wedges
- Mayonnaise
- Cotija cheese
- Paprika
- Spicy Dan-O’s Seasoning

Instructions
- Fire up your grill to around 400 degrees.
- Shuck your corn and place it in a large pot. Cover with water, and lightly salt your water. Boil corn for 10-15 minutes, until slightly tender. Remove from water and add to your grill. Grill for a few minutes on each side until slightly charred. Remove from grill and set inside to cool down.
- Once the corn is cooled, brush on a light coating of mayo. From there, either roll corn in (or sprinkle on) cotija cheese. Afterward, sprinkle on some paprika and a good amount of spicy Dan-O’s.
- Squeeze lime juice over the corn before eating.
