Chimichurri Skirt Steak Tacos

This recipe that Dan came up with was a special one. He originally cooked this recipe with NASCAR driver Spencer Boyd and TikTok food influencer Fireman1231. Together they made this Dantastic chimichurri skirt steak tacos meal. Just know that this recipe is meant for a large group of people because it yields a lot of meat.

The Chimichurri Skirt Steak Marinade

The key to this recipe is the marinade. This is the basis of this recipe and the key to making these steak tacos pop. For the marinade, it's okay if it seems a bit watery. You will want it to be that way in order to really soak into the meat. Dan’s little special ingredient to this marinade and to the sauce is using anchovies. They add a little additional salty flavor and they actually blend very well with everything else.

Whenever you go to make the actual sauce, make sure to cut down on the number of limes you use to thicken the sauce.

The Pickled Onions

Another great thing about this chimichurri skirt steak tacos recipe is the pickled onions. In this recipe and in the video Dan made, he actually boiled the water-vinegar mixture. This was in an effort to speed up the pickling process. If you prepare a little more before you can start the pickling process a day prior and there is no boiling necessary.

Ingredients

Pickled Onions:

  • 1-1/2 cup of water
  • 1-1/2 cup of vinegar
  • 1 tbsp salt
  • 2 tbsp sugar
  • Dan-O's Spicy Seasoning
  • 1 red onion, chopped

Steak Marinade:

  • Skirt Steak
  • Bushel of parsley
  • 1/2 of a head of cilantro
  • 1/2 cup of olive oil
  • 2 tbsp garlic
  • 1 jalapeño
  • 1 white onion
  • 1 can of anchovies
  • 4 limes

Chimichurri Sauce:

  • Bushel of parsley
  • Half of a head of cilantro
  • 1/2 cup of olive oil
  • 2 tbsp garlic
  • 1 jalapeño
  • 1 white onion
  • 1 can of anchovies
  • 1 lime

Grilled Peppers and Onions:

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 can of beer

Preparation Instructions

Pickled Onions:

  1. Add water, vinegar, salt, sugar, and Spicy Dan-O's, to a small pot and bring it to a boil.
  2. Fill a large mason jar with the red onion.
  3. Pour in the water/vinegar mixture on top of the onions until they are fully covered.
  4. Close lid and set aside for 1 hour.

Marinade:

  1. Throw the parsley, cilantro, olive oil, garlic, jalepeño, white onion, can of anchovies, and limes in a food processor and blend.
  2. Now, in a very large Ziploc bag, add your steaks and pour the marinade over top.
  3. Mix the bag well and seal it up and place in the fridge for XX hours.

Chimichurri Sauce:

  1. Repeat the same process for the marinade, but only use 1 lime instead of 4. This will allow the sauce to be thicker.

Grilled Peppers and Onions:

  1. Throw all of your peppers on a flat top grill and pour beer over top.
  2. Sprinkle with Dan-O's and cook.

Steaks:

  1. Now you are ready to cook your steaks.
  2. Place them on the grill for 5 minutes and coat with Dan-O's Original, then flip.
  3. Cook for another 5 minutes and coat the other side.
  4. Flip once more and cook for a couple more minutes.

Prepare your tacos:

  1. Throw the taco shells on the grill for just and minute and flip.
  2. Cut up your taco and put it in a shell.
  3. Top with chimichurri sauce, pickled onions, peppers, and top with some cilantro. Enjoy!
