The Backside Grill at Oldham Gardens whipped up some Dan-O’s inspired eats for the 2022 season of Whiskey Wednesdays, this is their Seared Chilean Salmon with Chipotle Honey Whipped Sweet Potatoes for you to make at home!

Ingredients
Original Dan-O’s Seared Chilean Salmon
- 2 Skinless Salmon filets
- 1T Olive Oil
- 2 T Dan-O’s Original
- 2 T Butter
- 1 Lemon (half for cooking, half reserved for garnish)
Chipotle Honey Whipped Sweet Potatoes
- 2 Large Sweet Potatoes
- 2 T Butter Melted
- 2 T Honey
- 1 T Dan-O’s Chipotle seasoning
- Salt to taste

Instructions
Original Dan-O’s Seared Chilean Salmon
- Coat salmon fillets in olive oil and Original Dan-O’s Seasoning while you heat the pan on med/high heat.
- Add Salmon to hot pan skinned side down and sear for 3 minutes.
- Flip and add butter and juice of half lemon sear and baste with butter for 3 minutes.
- Plate with Chipotle Honey Whipped Sweet Potatoes.
- Enjoy
Chipotle Honey Whipped Sweet Potatoes
- Baked Sweet Potatoes for 40 minutes at 350
- Combine Butter, Honey, and Chipotle Dan-O’s
- Scrape Sweet Potato from the skin into a large bowl while hot and mash with a whisk
- Add butter mixture and whip until combined and fluffy
