Cheesy Beef Tamale Pie

This Tamale Pie will have you saying Holy Tamale, I want some more! This is a great weeknight recipe for when you’re busy and just need to throw something together fast but don’t wanna miss out on big flavor. One of our favorite things about this Tamale Pie is much like a normal Tamale, you can really customize the protein in this. You could swap out 1 pound of the beef for a pound of chorizo, or swap it out for some shredded chicken or pork. You could even add some cooked black beans if you’re wanting something more vegetarian friendly. 

Another great thing about this Tamale Pie is that you can really control that heat if you want something a little spicier. We used Dan-O’s Original but you could try Dan-O’s Spicy for some smoky heat or Dan-O’s Chipotle for some additional smokey southwestern flair. You could also sub the Jalapenos for a Haberno or something even hotter. One thing we recommend with this Tamale pie is some good old fashioned hot sauce! We love to use Valentina on this, it’s the perfect amount of heat for this dish. We know you’ll love it too!

Ingredients

  • 1 box Jiffy Corn Mix
  • Dan-O’s Original
  • 1 egg
  • 1 ½ cups sour cream
  • 1 can creamed corn
  • 1 red bell pepper
  • 1 tomato
  • 2 jalapenos
  • 1 large onion
  • 2 lbs ground beef (80/20)
  • 1 pack taco seasoning
  • 1 can enchilada sauce
  • 2 cups shredded mexican blend cheese

Instructions

  1. In a bowl mix combine Jiffy mix, egg, sour cream, Dan-O’s Original, and creamed corn.
  2. Pour into a cast iron skillet, spread, and bake at 400F for 20 minutes
  3. In another skillet over medium-high heat, saute your peppers and onion
  4. Then add your ground beef and taco seasoning, cook until beef is browned
  5. Remove the grease from the skillet
  6. Remove cornbread from oven, poke holes and cover with ½ can of enchilada sauce
  7. Pour your peppers, onion, beef and cover with cheese
  8. Cover with foil and bake again 400F for 20 minutes
  9. Top with diced tomato and jalapeno
  10. Serve immediately, and enjoy!
