Ingredients

  • 1 spaghetti squash
  • 1 onion
  • 1 red bell pepper
  • Olive oil
  • Dan-O's Original
  • Garlic Alfredo sauce
  • Chicken breasts
  • Optional: Fresh garlic or minced garlic
  • Optional: Chopped parsley for garnish

Preparation Instructions

  1. Preheat Oven & Large Pot: Preheat your oven to 400°F (204°C). Fill a large pot with water and bring it to a boil.
  2. Microwave & Bake Squash: Microwave the spaghetti squash for 3 minutes to soften. Cut, deseed, brush with olive oil, and bake cut-side down for 35-40 minutes until tender.
  3. Cook Chicken: Grill or pan-sear chicken breasts seasoned with Dan-O's Original, garlic powder, and optional minced garlic for enhanced flavor.
  4. Sauté Vegetables: In a separate pan, sauté onions and red bell peppers in olive oil, seasoning as preferred.
  5. Prepare Alfredo Sauce: Gently warm the garlic Alfredo sauce in a pot. If you like, infuse it with some minced garlic for extra flavor.
  6. Assemble the Dish: Fluff the cooked spaghetti squash to create strands. Fill the halves with the Alfredo sauce, top with grilled chicken, and garnish with the sautéed vegetables and chopped parsley. Enjoy!
