Ingredients
2 tbsp Dan-O’s Dips Ranch
1 tbsp Dan-O’s Ranch Cheesoning
6 oz (2 cups) pasta
12 oz cherry tomatoes
1/2 yellow onion, cut into chunks (not diced)
3 tsp minced garlic
¼ cup olive oil
1 cup grated parmesan, plus more for garnish (can substitute feta cheese)
2 cups mushrooms, chopped
Preparation Instructions
Preheat your oven to 400°F.
Boil the pasta water: Bring a large pot of salted water to a rolling boil.
Season the veggies. In a large bowl, toss together the tomatoes, mushrooms, onions, and garlic with the olive oil. Sprinkle in the Dan-O’s Dips Ranch and give everything a good mix so the veggies are coated in ranchy goodness.
Spread the veggies out in a baking pan, so they have space to roast (crowding = steaming, and we want that roasted magic). Roast for about 25 minutes, stirring occasionally, until the tomatoes are blistered and juicy and the onions are soft and golden.
While the veggies are roasting, cook your pasta according to the package directions until perfectly al dente. Drain and set aside.
