Ingredients

  • Dan-O’s Outlaw Korean Pop BBQ
  • 1 tbsp olive oil
  • 1 lb ground chicken
  • 5 oz shiitake mushrooms any mushrooms will work here; make sure they are finely chopped
  • 1/2 yellow onion, diced
  • 1 cup shredded carrots
  • 1 8oz can water chestnuts, finely chopped
  • 6 green onions, sliced
  • 1 head butter leaf lettuce
  • chow mein noodles
  • 3/4 cup unsalted cashews

Sauce

  • 1 tsp Dan-O’s Outlaw Korean Pop BBQ
  • 1/4 cup soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 2 tsp garlic, minced
  • 1 tbsp ginger paste

Preparation Instructions

  1. Season the ground chicken generously with Dan-O's Outlaw Korean Pop BBQ.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground chicken and cook for 2–3 minutes, breaking it into crumbles until it's lightly browned.
  3. Stir in the mushrooms, diced onion, shredded carrots, and water chestnuts. Cook for 5–6 minutes, stirring occasionally, until the vegetables are tender and the chicken is fully cooked.
  4. While everything cooks, whisk together the sauce ingredients in a small bowl until smooth and well combined.
  5. Pour the sauce into the skillet and stir to coat the chicken and vegetables. Add the chopped cashews and most of the sliced green onions, saving a little of each for garnish. Cook for another 1 minute until everything is hot, glossy, and packed with flavor.
  6. Remove the skillet from the heat and let the filling cool for about 5 minutes.
  7. Spoon the chicken mixture into crisp lettuce leaves, then top with the reserved green onions, chopped cashews, and a handful of crunchy chow mein noodles if you're feeling extra.
