Ingredients
- 1 tsp Dan-O’s Original Seasoning
- 2 Idaho potatoes, sliced ¼ inch thick
- 1 tbsp olive oil or spray
- 1 cup Irish cheddar or sharp cheddar cheese, finely shredded
- 2 Green onions, minced
- Salsa and sour cream, if desired
Cheese Sauce:
- 2 tsp Dan-O’s Tac-O Seasoning
- 1/4 cup butter
- 3 tbsp all-purpose flour
- 3/4 cup milk
- 2/3 cup Guinness beer
- 2 tsp Dijon mustard
- 2 1/2 cups Irish cheddar cheese, shredded
Preparation Instructions
- Cook the Potatoes: Preheat your oven to 450°F. Thoroughly scrub the potatoes and slice them into approximately ¼ inch thick rounds.
- Arrange the potato slices on a large sheet pan in a single layer, making sure they don’t touch each other. Lightly spray them with olive oil and sprinkle with Dan-O's Original seasoning.
- Slide that pan into the oven and let those babies bake for 20 minutes. After that, flip them over and bake for another 20 minutes.
- Once golden and crispy, stack them on a plate like a potato pyramid and drizzle with cheese sauce, because what’s better than potatoes? Potato nachos!
- Finish by sprinkling with chopped green onions.
Cheese Sauce:
- In a saucepan, heat the butter over medium heat until it starts to sizzle. Then, remove from heat.
- Whisk in the flour until well combined, then return to low heat and cook this flour-butter mixture for 2 minutes. Turn off the heat again.
- Gradually whisk in the milk, beer, mustard, and Dan-O’s Tac-O seasoning, combining well.
- Switch the heat to medium-low and continuously whisk until the mixture becomes thick and bubbly; then turn off the heat.
- Stir in the cheese and whisk until the sauce is smooth and creamy.
- Taste the sauce and adjust the seasoning as desired.
