Ingredients
3 tsp Dan-O’s Cajun Seasoning
½ cup flour
2 large eggs
1 tablespoon finely chopped parsley
1 1/2 cup panko breadcrumb
2 filets of cod, cut into 1-inch pieces
1 teaspoon lemon juice
Cooking spray oil
Aioli:
1 tsp Dan-O’s Cajun Seasoning
1/3 Cup mayonnaise
1 tsp Dijon mustard
1 tsp lemon juice
1 tsp minced garlic
Preparation Instructions
Heat your air fryer to 400°F.
Make the aioli - mix all the ingredients well and set aside for dipping.
Mix flour and 1 tsp Dan-O’s Cajun Seasoning in a shallow dish and set aside.
Lightly beat eggs and the chopped parsley in a second shallow dish and set aside.
Mix panko and 2 tsp Dan-O’s Cajun Seasoning in a third shallow dish and set aside.
Pat the fish dry with a paper towel, season with the juice of ¼ lemon and a sprinkle of Dan-O’s Cajun Seasoning.
Dredge the fish pieces one at a time in the flour mixture, and shake off the excess. Dip in the egg mixture, letting the excess drip off. Then dredge in the panko breadcrumbs, and set it on a clean plate.
Spray your air fryer basket with oil, then place the coated fish in the air fryer basket. Cook at 400ºF for 5 minutes on each side or until the fish flakes easily and reaches 145°F. Making sure they don’t burn, take them out when browning.
