Ingredients

  • 3 tbsp Dan-O’s Cheesoning
  • Dan-O’s SPG Tri-O (Salt, Pepper, Garlic) Seasoning
  • 2 tablespoons olive oil
  • ½ finely diced onion
  • 2 pounds ground chicken
  • ½ cup bread crumbs
  • 2 teaspoons milk
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons chopped fresh parsley
  • 1 cup shredded mozzarella
  • 1 tsp minced garlic
  • Foil and plastic wrap

Topping

  • 1 tbsp Dan-O’s Cheesoning
  • 1 cup marinara sauce
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1/2 cup shredded mozzarella cheese

Preparation Instructions

  1. Preheat your oven to 375°F. Line a baking pan with foil and lightly coat it with cooking spray for easy cleanup.
  2. Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until softened and fragrant. Remove from the heat and let the mixture cool completely.
  3. In a large mixing bowl, combine the ground chicken, breadcrumbs, cooled onion and garlic, ¼ cup grated Parmesan cheese, milk, 3 tablespoons Dan-O's Cheesoning, 1 teaspoon Dan-O's SPG Tri-O, and the egg. Mix just until everything comes together—don't overmix if you want a tender, juicy meatloaf.
  4. Lay a large sheet of plastic wrap on your work surface and spread the chicken mixture into a large rectangle. Sprinkle the center with a little extra Dan-O's Cheesoning, the shredded mozzarella cheese, and the fresh parsley.
  5. Using the plastic wrap as a guide, carefully roll the meat mixture into a loaf, keeping all that cheesy goodness tucked inside. Transfer the loaf to the prepared baking pan.
  6. Bake for 45 minutes.
  7. Remove the meatloaf from the oven and spread the marinara sauce evenly over the top. Sprinkle with the remaining mozzarella cheese, then return it to the oven for 10–15 minutes, or until the cheese is melted and bubbly and the meatloaf reaches an internal temperature of 165°F.
  8. Let the meatloaf rest for 10 minutes before slicing. Finish with a sprinkle of grated Parmesan cheese, a little extra Dan-O's Cheesoning, and fresh parsley for the perfect finishing touch. Yum Yum Get Ya Sum!®
